This culinary innovation features a state-of-the-art Dry-Aging Fridge for perfectly aged Peking Duck, inventive dining styles such as Sushi Style with Duck Skin, and a twist on traditional roast pork with yuzu marination. Combining classic techniques with modern flair, this menu promises a distinctive culinary experience that highlights Ya Ge’s commitment to excellence.

Culinary Masterpieces: Dry-Aged Delights

At the heart of the new menu is the Dry-Aged Roasted Peking Duck, a testament to Ya Ge's culinary artistry. Carefully aged in a state-of-the-art Dry-Aging Fridge for over 7 days, the duck develops an exquisite flavour profile and delightfully crispy skin. This traditional dish is reimagined to deliver a rich and satisfying experience that pays homage to Chinese culinary heritage.

A Trio of Temptations: Peking Duck Three Styles

Style One: Sushi Style with Crispy Duck Skin 一吃: 寿司脆皮

The first style features glutinous rice fried with duck oil and is hand-moulded by our chefs. It's topped with crispy duck skin, delivering a delightful crunch and savoury richness in every bite.

Style Two: Traditional Skin Wrap 二吃: 传统包么么皮

The second style embraces the classic Peking duck experience, where diners wrap succulent slices of duck skin and tender meat in soft, handmade egg skin wraps, accompanied by fresh cucumber, sliced green apples and a sweet hoisin sauce.

  • Duck Bone Soup with Duck Meat Wanton 生滚鸭件鸭肉云吞汤 

Savour the comforting and aromatic duck bone soup, simmered to perfection, and served with delicate duck meat wontons. This heartwarming dish is a testament to the soothing and nourishing qualities of traditional Chinese soups.

  • Shake Shake Duck Meat and Bone 摇摇辣子脆鸭件 

Inspired by the popular McShaker Fries, this dish offers a fun twist, allowing diners to shake the duck meat with a savoury blend of salt, pepper, mala garlic powder and spices for an interactive and flavourful dining experience.

  • Shredded Duck Meat Porridge topped with Crispy Taro 生滚鸭丝脆芋粥

This comforting porridge features tender shredded duck meat and is topped with crispy taro strips for a delightful contrast of textures. It is a warm and nourishing dish that embodies the essence of comfort food.

Another highlight is the Roasted Suckling Pig, expertly roasted using charcoal for an authentic smoky flavour, and served with an in-house Chef’s Special Sauce (2-day advance notice is required for this order). The Roasted Pork Cubes, marinated with a hint of refreshing yuzu, provide a unique citrusy twist that elevates the dish's flavour profile. The Barbecued Duo Platter features a combination of Crispy Roasted Pork Belly and Chef's Roasted Barbecued Iberico Pork, creating a harmonious blend of rich flavours.
